I make these cookies into either glazed or as whoopie pie sandwich cookies.
In a mixer, cream together butter and sugar. When combined well, add egg, vanilla and molasses. Slowly incorporate dry ingredients : flour, soda, salt, cinnamon and ginger. Scoop onto parchment lined sheet and bake at 350 for 10 minutes.
Using powdered sugar, softened butter and milk, make either a glaze or frosting.
